Vegan Chile

This is way too easy.  

Ingredients:

Diced yellow squash, diced jalapeño, diced shallot, diced carrots, diced bell pepper, green beans, corn shucked, one can of white beans, rinsed and drained and diced tomato.

Method:  

Saute the shallot in a tablespoon of olive oil for a few minutes.  Add half a teaspoon of minced garlic and continue cooking for another minute. Add the carrots and saute for a few more minutes, then add the remaining ingredients and a dd salt, pepper and cumin to taste. Continue cooking for another 5-10 minutes, until the veggies are cooked through, but the green beans, carrot and bell pepper are still crispy.  That's it.  Time to enjoy.
